Et nyt tyngdepunkt i Pavie
Château Pavie er Premier Grand Cru Classé A i Saint-Émilion og et af de mest markante slotte i Perse-familiens portefølje. Gérard Perse købte ejendommen i 1998, og slottet blev siden løftet til Premier Grand Cru Classé A i 2012. Terroiret spænder fra Saint-Émilions kalkstensplateau, omkring 85 meter over Dordogne, til midten af skråningen omkring 55 meter. I 2022 blev Pavie-Decesse og Bellevue-Mondotte lagt ind under Pavie, hvilket udvidede markarealet med knap 5 hektar og bragte yderligere kalkstensjord ind i vinens grundlag.

2025 er historisk for Pavie: 60% Cabernet Franc, 30% Merlot og 10% Cabernet Sauvignon. Det er første gang, Cabernet Franc er den dominerende sort i Grand Vin, og ifølge anmeldermaterialet er det også den højeste Cabernet-andel i slottets moderne historie. Høsten fandt sted i september, og årgangen ligger på 14,34% alkohol og pH 3,58.

Perrotti-Brown beskriver en langsomt åbnende Pavie med kirsch, sorte hindbær, friske blommer, syrener, blyantspåner, vild salvie og knuste sten. Paletten er fyldig, men levende, med tætte sorte og røde frugtlag, modne, faste og kornede tanniner, markant spænding og en lang afslutning med mineral- og blomsterpræg.

Anson fremhæver æbleblomst, iris og viol fra første øjeblik, sammen med greengage-blommer, rosengrene, skifer, brombær, damson og crème pâtissière. Hun læser vinen som langtidsholdbar, med massivt greb, østersskals-mineralitet og en usædvanlig kombination af ekspansion og spænding. Hun noterer også den lange maceration og at 2025 er sidste årgang under Gérard Perse.

Hindle ser sort frugt, chokolade, viol og cassis i en intens næse, fulgt af en kødfuld, tygget og bred palet, men med kølende syre, blå frugt, mynte, lakrids og kalket afslutning. Galloni kalder 2025 en storslået Pavie med mørk rød og lilla frugt, eksotisk krydderi, mokka, espresso og granatæble, men også med mindre af den tunge ekstraktion, som prægede nogle tidligere år.

Pavie 2025 er stadig Pavie i skala og intensitet, men arkitekturen er anderledes: mere Cabernet Franc, mere kalkstensnerve, mere lineær kraft. En stor Saint-Émilion, hvor fremtiden fylder mere end den umiddelbare pragt.

    Fragrant apple blossom, iris and violet flowers on the nose, brings its A-game from the first moments; coupling bright greengage plums, rose stems, and an intense grip of slate, with creamier blackberries, damson and creme patissiere. A ton of grip and length, this is in it for the long game, with pulses of oyster shell minerality to close things out. Brilliant. Here they did 8 weeks maceration, longer than most, but they felt that the wines needed a little longer to fill out through the mid palate, and for sure this is showing exceptional expansion and tension. Harvest September 15 to 29, first time in the Perse era that this has been entirely in September - and the final vintage under Gerard Perse. Pavie Decesse and Bellevue Mondot are now included in the main wine, bringing their limestone soils to the blend, and this is the highest amount of Cabernet to date. 21hl/ha yield, 3.58ph.

  • The Wine Cellar

    Showing one of the deepest colors of the vintage, the perfume kicks off with black raspberries, mint leaves, black cherries, flowers, tobacco wrappers, licorice, spice, and espresso aromas. The palate is intensely concentrated, yet, there is so much lift, and energy, the wine feels almost relaxed on your palate. The waves of rich, dense, opulent, lush, and salty, mineral-infused berries start off strong, and keep on going. The mid-palate, and finish delivers its message of ripe, deep, black, with red fruits, spice, crushed stones, camphor, licorice, and dark chocolate without hesitation through to its endnotes that get close to the 60-second mark. The wine blends 60% Cabernet Franc, 30% Merlot, and 10% Cabernet Sauvignon, making this the highest percentage of Cabernet ever used in the blend. 14.3% ABV. 3.58 pH. Harvesting took place September 15 - September 26. Yields were 21 hectoliters per hectare. Drink from 2030-2065.

    Deep garnet-purple in color, the 2025 Pavie slowly unfurls to reveal a wonderfully evocative perfume of kirsch, black raspberries, fresh plums, and lilacs, giving way to hints of pencil shavings, wild sage, and crushed rocks. The full-bodied palate shimmers with fantastically dense yet vibrant black and red fruit layers, framed by beautifully ripe, firm, grainy tannins and amazing tension, finishing long with a myriad of mineral and floral sparkles. Sensational. The blend is 30% Merlot, 60% Cabernet Franc, and 10% Cabernet Sauvignon—the highest proportion of Cabernet Franc ever for Pavie. The alcohol is 14.34% and the pH is 3.58.

Château Pavie

Château Pavie har igennem de seneste årtier gennemgået en kolossal udvikling. Slottet blev i 1998 overtaget af Gérard Perse, som dermed blev en af de største jordbesiddere i hele appellationen. Gérard Perse ejer bl.a. de to Grand Cru Classé slotte Chateau Pavie-Decesse og Chateau Monbousquet samt tre ejendomme i Côtes de Castillon.

Gérard Perse har skabt sin formue i detailbranchen, og en stor del af de mange penge der kom fra salget af en stor supermarkedskæde, er blevet investeret i Château Pavie. Flere af vinmarkerne på Pavie er blevet genplantet, og alle produktionsfaciliteter er blevet udskiftet eller renoveret. Der er blevet investeret i stor stil. Og resultaterne er mærkbare. Belønningen kom i 2012, hvor slottet blev forfremmet fra Premier Grand Cru Classé B til én af kun fire ejendomme i klassifikationen Premier Grand Cru Classé A.

Château Pavies andengæring foregår på helt nye egefade, hvorefter vinen lagres 18-24 måneder på disse fade. Resultatet er en kraftig og meget koncentreret vin.
